Flatbread Pizza with Veggies & Lemon Ricotta

This quick and easy flatbread pizza is perfect if you don't have much time or simply don't want to spend an hour preparing a whole meal in your kitchen. Plus, it's the perfect size for one person.

The other day when I was in the supermarket, I saw a pack of naan bread and thought to myself, that’s the perfect pizza size for a quick and delicious dinner.

Don’t get me wrong, I love a “proper” pizza, but often it’s too big so I feel too full afterwards or I just don’t want to go and order it (introverts problem)….

That’s why I love these small pizzas. They are easy to prepare and you can get really creative with the toppings.

I used naan bread from the supermarket as the base. Of course you can make it yourself, but if we’re honest, sometimes we’re just busy and convenience just comes first.

Recipe

For the Flatbread Pizza (1-2 Person)

Base:

  • 2 naan bread

  • 150 g ricotta

  • 1/2 lemon

  • 2-3 garlic cloves

 

Topping:

  • Zucchini

  • Cherry tomatoes

  • Fresh basil

  • Pepper

  • Olive oil

     

  • Balsamic glaze

  • Rocket

Instructions

  1. Mix the ricotta with the juice of half a lemon and crushed garlic.

  2. Spread on 2 naan breads and top with zucchini, cherry tomatoes, fresh basil and pepper.

  3. Drizzle with olive oil and bake for 15 minutes at 180° C.

  4. Drizzle the balsamic vinegar and rocket on top.
