Crispy Smashed Potatoes on Plate with Pesto Sauce

Potatoes are underrated! I mean yes, we all (or at least most of us) love fries, but I think there are more wholesome and delicious ways to consume potatoes. These crispy baked potatoes are my new favourite side dish and they are very easy to prepare

I remember exactly where I ate smashed spuds for the first time. It was in Bali in Canggu in 2018. Years later, this recipe popped up on my TikTok feed and I had to make it right away.

Making them is very easy and you need minimal ingredients. And the fun part is smashing the potatoes!

An extra health benefit of this recipe is that by boiling the potatoes before baking, you get rid of some of the starch that spikes blood sugar levels. Boiling potatoes before baking them is also what allows you to get this crispy, mouthwatering crust.

Recipe

For the Smashed Potatoes

  • Potatoes

  • Olive Oil

  • Salt & Pepper

Instructions

  1. Preheat your oven to 200° and boil the potatoes for about 15-20 minutes.

  2. Then smash them (You can use a glass or whatever else you have to hand for this).

  3. Add olive oil, pepper & salt and bake for 40 minutes.
