Banana Walnut Bread

Banana bread is the best thing you can make from overripe bananas. It's healthy, easy to make, delicious and you can eat it right away for breakfast.

Okay so funny story: the first time I heard about “Banana Bread” was when I watched Soul Surfer. There is this one scene where she’s trying to make breakfast with the family after she was discharged from the hospital. I was a teenager and thought to myself “what is banana bread?”.

So I googled it and made my first banana bread.

Years later I am still obsessed with it and experiment with it all the time. I like adding in different ingredients and swapping out the flour etc.

This banana bread with walnuts is by far one of my favorites. The summer of 2022 was the summer of me making this 1-2 every week. So I had to share the recipe with you.

Recipe

For the Banana Walnut Bread

  • 3 very ripe bananas

  • 70 g butter, melted (or olive oil)

  • 150 g honey (about 1/2 cup)

  • 1 egg, beaten

  • 1 tsp vanilla extract

  • 1/2 tsp baking soda

  • 200 g flour (about 2 cups)

  • 125 g walnuts (about 1 cup)

Instructions

  1. Preheat the oven to 180 °C and butter or line a baking dish with baking paper.

  2. Mash the ripe bananas with a fork.

  3. Stir the melted butter, honey, beaten egg, and vanilla extract

  4. Mix in the baking powder and the flour.

  5. Chop a few walnuts and fold into the mixture.

  6. Pour the batter into the prepared loaf tin and bake for about 50 minutes.

  7. Leave to cool completely before digging into it.

Notes

Swap out the flour for oat flour to make it gluten free.
